Ingredients for crab boil:1.1lb pork loin (or beef)3-4 scallions, peeled and finely chopped2 garlic cloves, minced1 bay leaf3-5 fresh bay leaves, chopped1 tsp cayenne pepper, to taste1 tsp dried thyme, to add to dishCrab boils are typically made with ground beef, but you can also make them with pork and pork ribs.
The marinade can be made with soy sauce or coconut milk.
To make the marinades, peel the pork loins and finely chop them.
Place them in a pot and cover with water.
Bring to a boil and then reduce to a simmer.
Cook for 30 minutes, or until meat is tender.
Add the scallons and garlic and cook for another 30 minutes.
Drain the water and set aside.
Once you have removed the pork, add the bay leaf, thyme and bay leaves to the marinsade.
Simmer for another 10 minutes, stirring occasionally.
When the marinating has thickened, add in the spices.
Continue to simmer until the spices are fragrant.
When you want the pot to be bubbly, add a splash of water.
Cook over low heat for a couple of minutes to loosen the marination.
Add in the ground beef and cook until it is tender and starting to brown.
Drain and set on a plate to cool.
For the crab boil stuffing:1lb ground pork2 bay leaves1 tsp ground ginger1/2 tsp dried onion, to season1 tsp smoked paprika1 tsp turmeric, to garnish1 tsp garlic powder, to dusts and garnishCrab steaks can be marinated in the same way as pork.
However, you want to marinate them in some other way.
To marinate the ground pork, rub it with some salt and pepper, then add a pinch of garlic powder and cook it over a low flame for about 15 minutes.
The cooking time will help to marinise the pork.
The next step is to add some salt to the meat.
After this, add some of the pork fat.
To do this, heat a large skillet over medium heat.
Add a few tablespoons of the fat and swirl it around the pan to coat it in some of that fat.
Then add in some garlic powder.
Continue this cooking for about 20 minutes, turning occasionally.
After the cooking time is up, add to the pan some ground beef.
This will give it a nice, brown crust.
Add some of this to the mixture of marinaded pork and ground beef to make the crab steaks.
Then mix everything together.
It should look like a thick sauce.
To make the stuffing, place the ground meat in a large pot, cover with some water and let it cook for around 15 minutes or until it starts to soften.
Add in the bay leaves and the onion.
Cook this for about five minutes, then stir in the smoked paprikas and turmeric.
Add to the stuffing.
Once it’s ready, add more ground beef or pork to it, and mix it all together.
To serve, dip the crab bones in the stuffing and top with the shredded pork.
If you want, you can add a drizzle of sauce to the bottom of the pot, to give the stuffing a little extra flavour.
